One of my favourite meal to cook when I crave for a hot meal but don’t have enough time is this quick vegan curry which can be whipped in just 20 minutes or less. The fact that you can also pick whatever vegetable you want to add is interesting. Not to mention you can cook just for yourself or for a bigger crowd and easily adjust the serving size without too much fuzz.
What I love about this dish is that I can eat it with a bowl of rice or simply with a slice of bread if I’m in a hurry. I also cook a bit more so I can freeze it be able to prepare a meal during my busy days.
This is a great meal as a pre-workout dish as it’s rich in vitamins and nutrients that can give you energy for a gym visit or home exercise.
