Here’s an honest confession, I love rice, fried rice to be specific. I’m aware that cutting down carbs is one of the keys of this fasting journey and I was sad when I learnt that. If you read about my recipe of Crispy Oriental Chicken, you already know that I don’t believe in 100% cut off food that I like and one those is my love for rice.
I’m not a fan of cooking brown rice, I can never perfect it for some reason but it’s more nutritious than white rice, so that has to be good enough. To make this dish more fun, healthier, and vegetarian, I added tofu, egg, and South Korea’s famous Kimchi!

If you want to cook this dish in bulk, you may do so. Remember to place the left-overs in separate containers depending on the serving size you prefer so you can reheat it easier later. Just remember that reheat rice is not as good as freshly cooked but it’s still yummy!
