This recipe is inspired by a Filipino dish called “Pininyahan Manok”. The main ingredient of this dish is chicken, coconut milk, and pineapples. From preparation to cooking, it shouldn’t take a long time but if you want to enjoy it with a bowl of rice, that can take extra time if you don’t have a rice cooker or if you only have single cookstove.
During your fasting journey, you want to have all the nutrients you need in your meal especially if you are doing OMAD (one meal a day fasting. In that case, Creamy Pineapple Chicken is a perfect match for OMAD meal plan.
It’s high in protein, rich in fibre and other nutrients that your body needs daily. Personally, I cook this meal once a month in a bigger portion and freeze the rest. You can have this dish with rice but a side bread or nan is not a bad idea either or to save you the cooking time, you can add some potatoes to reach your macro fix of the day.
Personally, I would have this meal as a pre-workout dish and matched with light meal of the day like Hearty Couscous or a simple bread and guacamole or hummus.
